Furious Fermentation

Holy crap! The new Belgian is still percolating away in primary fermentation at a crazy rate. I had 1 day of "lag time" after brewing on Sunday, when nothing really happened. By Tuesday morning though, it was fermenting so furiously that I had to add a second blow-off tube! I figure 10 days for primary fermentation on this baby. The "special yeast" is doing its job well.
Tonight, I think I'll transfer the K├Âlsch into a tertiary fermenter, and move it into "cold conditioning."

Are you going to leave it in Sputnik for secondary fermentation?

Yes. I'll off-load the initial dead yeast from the bottom sanitary valve. I'll then re-pitch with a Belgian Trappist yeast. That's the joy of a conical fermenter with the right fittings.
